Ingredients
  

  • Steak sirloin, ribeye, or tenderloin, cut into bite-sized cubes
  • Salt
  • Pepper
  • Olive oil
  • Unsalted butter
  • Garlic minced
  • Fresh parsley chopped
  • Fresh chives chopped
  • Fresh thyme chopped
  • Lemon juice
  • Dijon mustard
  • Paprika
  • Red pepper flakes

Method
 

  1. Cut the steak into bite-sized cubes. Season the steak with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil. Once hot, add the steak cubes in a single layer and sear for about 2-3 minutes on each side, until browned and cooked to your liking. Remove the steak from the skillet and set aside.
  3. In the same skillet, reduce the heat and add butter. Let it melt, then add garlic, parsley, chives, thyme, lemon juice, Dijon mustard, paprika, and red pepper flakes. Stir until the butter melts into a smooth sauce.
  4. Return the steak bites to the skillet and toss them in the cowboy butter until well-coated. Let the steak absorb the flavors for 1-2 minutes.
  5. Plate the steak bites, drizzle with any remaining cowboy butter sauce, and serve immediately.

Notes

For extra heat, add cayenne pepper or chopped jalapeños to the cowboy butter. 
You can substitute different herbs like rosemary or oregano for a unique twist. 
To achieve the perfect sear, don’t overcrowd the pan; cook the steak in batches if necessary.
